Suzushiro, a standing 100% buckwheat soba noodle restaurant in Miyoshi, Koto Ward , opened in December 2025.
I had been curious about it ever since I saw the opening information, and as it was still in pre-opening in January 2026, I waited until the right time to visit.
Please note that opening hours vary depending on the day , so it is recommended to check social media or in-store displays before visiting.

It blends in with the residential area, and its appearance makes you stop and think, “This looks like a good soba restaurant.”
The interior of the restaurant is a modern space with jazz and granite.

The impression changes completely when you enter the restaurant.
Jazz music is playing in the background, and a large granite table is placed above it, with a striking white lantern hanging.
It’s completely different from the typical “standing soba” image, and
is quite stylish and modern . It’s a space that makes you want to take photos.
How to order | Completely cashless and self-service
To order, you first purchase a meal ticket .
The ticket vending machine is a tablet and only cashless payment is accepted.
Points to note
- Cash is not accepted
- Water and tea are provided on the tables and can be provided by yourself.
- When you are called to the counter, you pick up your food yourself.
- After eating, return the dishes to the return counter.
Overall, I got the impression that it was an efficient and modern operation .

This is a set of soba noodles and rice bowl .
Set contents
- Morisoba noodles
- Tempura sauce
- Oyster and Shishito pepper tempura bowl
- Condiments (green onion and grated daikon radish)
- salt
The grated daikon radish is roughly grated, giving it a firm texture,
and the citrus fruit garnish makes the soba noodles very refreshing.
The oyster tempura is presented in a bold, chunky arrangement, and
when you bite into it, it ‘s juicy and the aroma of the sea fills your mouth.
The outside is crispy and the inside is plump, creating a delightful contrast in texture.

The shop is a seafood wholesaler from Tsukiji, so it was clear that
the oysters were very fresh .
The regular serving of soba noodles is 300g.
It’s so satisfying you wouldn’t believe you’re eating standing up.

The dipping sauce is also filled with chunks of oyster tempura,
and the delicious flavor of the broth and the richness of the oysters combine to create a truly luxurious taste.
The aroma of the grilled onions adds a nice accent, so you
won’t get bored of eating it until the very end.
You can also finish off your meal with soba soup yourself.
After the meal, we diluted the soba soup and dipping sauce in the pot of soba soup that was placed on the table .
It’s self-service, but
being able to “finish at your own pace” is actually quite pleasant.

It was an impressive store.
It’s still in pre-opening so there are still some unknowns, but I feel that this is
a place that will become even more popular in the future .
Located in the Miyoshi area of Koto Ward, this is the perfect place for when
you want to quickly eat some good soba noodles .
